Background:Gluten detection by using qPCR.
Celiac disease is an autoimmune disorder associated with an intolerance to gluten proteins mainly present in wheat, barley, and rye. It is characterized by an inflammatory response that leads to atrophy of the small intestine and malabsorption. Celiac disease is estimated to affect 1 % of people worldwide. The treatment of gluten-related disorders is based on a lifelong gluten-free diet. Accordingly, reliable and sensitive methods are required to detect the presence of gluten contamination in food samples. Traditional techniques rely on the detection of the proteins based on specific antibodies, but recent approaches focus on detecting the DNA of cereals with gluten content. This assay does not detect the avenin from oat (Avena sativa) which despite being a different protein could sometimes, but to a much lesser extent, produce a reaction in people with celiac disease.
