Allergen-Shield Cashew is an ELISA test that determines cashew residues in food products labelled as cashew-free.

GENERAL INFORMATION:Cashew (Anacardium occidentale) belongs to the Anacardiaceae. It contains a high fraction of proteins (≈18%) and many of these are known to be allergenic, such as vicilin Ana o 1, legumin Ana o 2 or albumin Ana o 3, among others. Most of these proteins are thermally-stable during various production processes. For this reason, cashew is the second most common nut allergy. Consumption of cashew might be harmful for people who are allergic to it. The allergen can be present as an ingredient or as a contamination in raw and cooked products. Consumption of cashew-containing food from allergic people might cause a broad range of symptoms, such as hives, mild oral allergy or/and anaphylactic shock. Because of this, consumption of cashew or cashew containing food should strictly be avoided from allergic persons. According to the regulation (EU) No. 1169/2011 Annex II, cashew is included in the list of allergens established by the European Food Safety Authority, and its presence must be indicated on the label. Similar regulations exist e.g. in the USA, Canada, Australia and New Zealand.
