Allergen-Shield Brazil Nut is an ELISA test that determines brazil nut residues in food products labelled as brazil nut-free.

GENERAL INFORMATION:Brazil Nut (Bertholletia excelsa) belongs to the Lecythidaceae. It contains a high fraction of proteins (15-20%). The major allergen protein is a methionine-rich protein (Ber e 1), which is also used to enrich soybeans. It is thermally-stable during various production processes. Consumption of brazil nut might be harmful for people who are allergic to it. The allergen can be present as an ingredient or as a contamination in raw and cooked products. Consumption of brazil nutcontaining food from allergic people might cause a broad range of symptoms, such as hives, mild oral allergy or/and anaphylactic shock. Because of this, consumption of brazil nut or brazil nutcontaining food should strictly be avoided from allergic persons. According to the regulation (EU) No. 1169/2011 Annex II, brazil nut is included in the list of allergens established by the European Food Safety Authority, and its presence must be indicated on the label. Similar regulations exist e.g. in the USA, Canada, Australia and New Zealand.
